TANDOORI
CHICKEN& LEMON
SPICYRICE
We all love a good curry but they are not always themost
suitablemeals for athletes. However the spices used in Indian
cookery have awhole host of health andperformance benefits.
Servewith a choice of green vegetables tomake a complete
meal.
Ingredients
8 large chicken Supremes (150-180g each)
1 tablespoon Tandoori spicemix
200g (5 tablespoons) low fat natural yoghurt
3 cups uncookedbasmati rice
2 tablespoons coconut oil
2 tspmustard seeds
½ tsp fenugreek seeds
3 tsp freshginger grated
1 tspground turmeric
Juice of 1 lemon.
For the chicken:
Mix the yoghurt with the spicemix and the chicken. Leave
overnight in the fridge tomarinate.
When ready to cook, remove some of the excessmarinade
and then cook in the oven at 200C for 25mins or until cooked
through.
For the rice:
Cook the rice until a couple ofminutes before done, remove
from thewater and allow to steamwhilst you cook the spice
mix.
Heat the coconut oil and add themustard and fenugreek seeds
until lightly browned. Then add the ginger, turmeric and cook
for anotherminute. Add this to the rice together with the lemon
juice and combinewell

SESAMECHICKEN
Sesame in this recipe contains lignanswhich help the body’s
absorption and availability of vitamin E. They also help the liver
function in breaking down fats.
Cinnamon canhelp in the regulation of our blood sugar levels.
Combinedwith fennel they are also believed to helpdigestion.
Cloves containmanganesewhich is very important for bone
health
Ingredients
12 large skinless boneless chicken breasts
1 cup soy sauce
1 cup ginger wine
3 tablespoonsmaple syrup
3 tablespoons sesame oil
3 tablespoons Chinese 5 spice powder
3 tablespoons sesame seeds.
Method:
Whisk together all of themarinade ingredients apart from the
sesame seeds. Combine themarinadewith the chicken and
leave overnight in the fridge. Remove from the fridge half
anhour before cooking and sprinkle over the sesame seeds.
Place into the oven at 190C for approx. 30minutes or until
cooked. Servewith basmati andwild rice and steamed green
vegetables for a completemeal.
